Delicious antioxidant turmeric pancakes

Pancakes is one of my favorite recipes and curcuma one of my top spices, so since I discovered this recipe it has become one that is always in my repeat list! I love that turmeric adds a splash of all-natural colour to this easy pancake recipe. 

This recipe is easy to make. Fluffy and filled with anti-inflammatory properties, it will also help you if you are in a weight loss plan or if you want to maintain it.

Did you know that turmeric is amazing for your immune system?
It contains powerful substances called curcuminoids! It is one of the most widely researched plants for its therapeutic function. Turmeric has been linked to everything from heart disease, to even improving your mood.

What you will need

  • 2 cups almond flour, rice flour or oatmeal flour
  • 1 teaspoon of baking powder
  • 1 teaspoon vanilla (optional)
  • 3 eggs
  • ½ cup almond milk, coconut milk (any non-sweetened non-dairy milk)
  • ½ tablespoon of turmeric powder
  • ½ tablespoon of ground cinnamon
  • ¼ tablespoon of powdered ginger
  • 2 tablespoons of sweetener such as stevia or monkfruit


FOR THE TOPPING (OPTIONAL):

  • ¼ cup unsweetened yogurt (Greek)
  • ¼ cup chopped walnuts or almonds
  • Optional fruits to taste

Step by step

Mix plant milk, turmeric, cinnamon, ginger powder and sweetener with wire whisk or in the blender. Separately, mix the flour, the baking powder, the vanilla and egg. Now, combine the two and whisk all together.

Preheat a skillet over medium heat. Prepare the pancakes in the pan, leaving 2-3 minutes to be done on one side until bubbles begin to appear above and flip.

Serve it with sliced fresh fruit, greek yogurt and almonds.
